Onnies Hog Liver Pudding
1 Hog Head
2 Livers
2 Hearts
1 (Lights) (the lungs cut in small pieces)
2 Sweet breads
4 Kidneys
1 1/2 cups of cooked rice
Cook until tender and grind fine
Salt, pepper and sage to taste.
Stuff in large casings
Cook in the water where the head was cooked, about 15 min. Do not boil
just simmer.
At meal time put in oven and brown. (Put rice in only if eaten the 1st
day)
Onnie could make the best liver pudding and for breakfast with hot biscuits
And sirup made the best breakfast ever.
This was made ever butchering day.
