Here is our menu for the diner party.
Asparagus Salad
Asparagus, marinated in balsamic vinegar dressing, served on Boston
and Bibb lettuces.
Manhattan Salad
Ratatouille-style mixture fortified with miso, a soybean-brown rice
combination providing protein.
Nutloaf
Meatloaf substitute made from veggies, nuts, egg and bread crumbs.
Stuffed Zucchini
Zucchini filled with spinach and artichoke hearts.
Potato Cake
Potatoes, red onions and Swiss cheese flavored with basil.
Vegetable-Cheese Musaka
A lighter version of the well-known Greek dish includes mushrooms,
squash, noodles and feta cheese.
Assorted Breads from Fresh Fields
Chocolate Cream Cake
Delicious, rich and creamy - surprise ingredients are tofu and
couscous.
