Elizabeth,
I have found the Blue Apron “meals” sufficient to make 3 meals for me.
I also have cut back on the starches and often don’t make the rice,
pasta or potatoes. You will find almost all their meals are fried
in olive oil. I often will use the grill instead. I often
change, substitute or use different or additional spices. I don’t
care much for cilantro so will substitute something else.
This weekend will be busy for me as the Smithsonian had a guided kayak
tour on Mallows Bay which my daughter and I are doing Saturday and the
on Sunday is the yearly Yoga Festival at Reston Town Center and I
have to prepare for my trip to Bannff Canada which I am leaving on
Thursday.
I still read a lot of SciFi and just started a new series. It is
fast passed, action packed but not much depth but entertaining.
With work being so intense it is a good release. I usually read
for a half to an hour before sleeping as I find other wise I start
thinking about work which keeps me up. I do so much looking
forward to retirement which I won’t have to think about work.
I did get a book on microbiology because it interest me but I just can’t
concentrate on such at this time. I still read several magazines
each month, National Geo and Popular Science which both I have read for
like 50+ years (really!) as well as Smithsonian and Wired.

I did Blue Apron for about a year and really liked it. I would usually cook the full meal which was for two persons and then have leftovers for the next couple of days. The quality of the food and variety was great. I never would have cooked such meals for one can’t just buy all the ingredients in single serving sizes.
